Rum is the people’s spirit. At times celebrated, others maligned throughout history — perhaps because of its race and class associations, perhaps not – rum is a spirit unique in its ability to be produced just about anywhere. Distilled from molasses or sugarcane, the rules of rum have long been protected in the areas where the conditions are ideal for production – countries throughout the Caribbean like Jamaica, Guyana, Haiti and Barbados, to as far as places in South Asia like the Philippines, which it notably the world’s largest rum producer.
The cocktail landscape today favors the fortunes and future of rum. From funky pot still styles to vegetal and crisp rhum agricole, to rich baking spice blackstrap – the integrity and quality of the spirit offers depth and complexity, both in flavor and cultural significance. We are witness to the reimagining of tiki cocktails and culture, rum’s most prominent vehicle, through a decolonized lens. And we celebrate leaders who have led and continue to lead the way for rum, like Joy Spence, Colin Asare-Appiah, and Shannon Mustipher, as well as trailblazing brands such as Equiano, Kingston Bay, and Kasama.
Rum will always have a home at Comfort Kitchen. Cheers!
